Mango and Blackberry Salad with Ginger


I was in the mood for something really tasty and refreshing the other day and, glancing at the ingredients I had on hand, decided to make this mix of fruits and veggies to go with my homemade veggie smoothie and spelt-crusted pizza for lunch.

At first I was going to slice the cucumber and radish (I prefer both that way) but it seemed strange alongside the berries and chunks of mango, so I decided to dice them instead – and the radish quite finely to avoid any shocks of its zinginess.

This salad is a great mix of nutrient-dense fruits, cleansing yin vegetables, and yang ginger heat and anti-inflammatory properties.

Serves 1-2

– one mango, diced
– one large radish, finely diced
– ¼-½ cucumber, diced
– ½ cup blackberries
– one chunk ginger, finely grated, to taste

Mix all ingredients in a bowl and massage the ginger in with your hands. Give your salad some loving intention here, too!

You can let the ginger get friendly and seep in for a few minutes while you prepare other things.

Serve immediately or refrigerate for later.
