During the autumn and winter, Canada has some of the best apples to offer. I recently came across some beautiful organic honeycrisp apples that were truly deserving of their name – they were crisp, sweet, and full of juice!
Something about apples and cinnamon in the mornings, particularly the cold ones, just seems right.
Serves 4

Ingredients:
– 1 cup rolled oats
– 1 apple, washed and grated
– 3 cups water
– ½ tsp cinnamon
– 2 tbsp maple syrup (optional)
– chopped almonds for garnish, 1 tbsp per serving
– raisins for garnish, to taste
Heat the oats in a stainless steel saucepan over medium heat and gently toast them for a few minutes. Add the apple, water, and cinnamon and bring to a boil. Simmer, uncovered, on low for 15-20 minutes, or until oats are fully cooked.
Turn heat off. At this point, you can stir in the maple syrup, which makes for a delightfully sweet treat. For every day, however, I recommend trying it without the added sweetener – I think you’ll be surprised by how delicious the apple is all on its own.
Garnish with chopped almonds and raisins for a quick and delicious breakfast.
